Don’t you just love those recipes that are not only delicious and filling, but also light and healthy? Well, look no further. We just discovered this tasty and healthy soup – and it comes with a bit of a kick! Quick and simple to prepare, this super-green soup is a recipe that makes eating well seem super easy.

Serves 4 | 30 Minute Prep time 

Ingredients:

  • 1 tbsp coconut oil
  • 3 shallots, finely sliced
  • 2cm piece of fresh root ginger, peeled and grated
  • 1 green jalapeño pepper, deseeded and finely chopped
  • 1 fat garlic clove, minced
  • 1 head of broccoli, stalk peeled and roughly chopped, head broken into small florets
  • 600ml vegetable stock
  • 150g frozen peas
  • 400ml coconut cream
  • 120g baby spinach
  • 1 small bunch of mint leaves
  • Juice of 1-2 limes, to taste
  • Sea salt and ground black pepper

To serve: 

  • Chilli flakes
  • Coconut cream

Method:

1. Put the coconut oil in a saucepan over a medium heat. Add the shallots, ginger, chilli and garlic with a pinch of salt, and cook until the shallots are soft and translucent.

2. Add the broccoli to the mix and stir everything together. Add the vegetable stock, peas and coconut cream.

3. Gradually bring to the boil, then lower the heat and simmer for 15-20 minutes until the broccoli is tender.

4. Add the spinach and mint, then blend until smooth. Season with salt and pepper, and add lime juice to taste. Ladle into bowls and serve.

5. Garnish this super-green soup with a sprinkle of chilli flakes and drizzle of coconut cream.
