Ingredients
- 3 cans coconut milk, full fat.
- 1 vanilla pod or 2 teaspoons vanilla essence.
- 1 stevia, optional.
- 4 lavender essential oil, drops.
Preparation
Step 1
Leave two cans of coconut milk in your refrigerator for a period of at least six hours. Preferably overnight. Empty the contents of the other coconut milk can into a saucepan.
Step 2
Add in the vanilla and bring the pan to a simmer. Stir only once.
Step 3
Gently simmer for 30 minutes on low, until the milk has thickened or has halved.
Step 4
Open up the other two cans of chilled coconut milk. The milk should have risen to the top. Scoop the coconut cream into a chilled mixing bowl. You can either use an electric beater or whip the coconut cream manually. Quickly beat the cream for about 3-4 minutes, until it is light and fluffy.
Step 5
Add the condensed coconut milk and whip at high speed for another 2–3 minutes.
Step 6
Now add the lavender essential oil. You can taste the mixture to test for flavor and add more vanilla, stevia, or lavender according to your taste buds.
Step 7
Transfer mixture into a baking container (with cover). You can take this out after a few hours for a delicious mousse-like ice cream. I recommend freezing it overnight if you’d prefer thicker ice cream.
Step 8
Set out for at least 20 minutes prior to scooping out your first serving.

Indulge in your tasty, relaxing, and guilt-free treat!
